Advantage for the customer
The AVS (automatic pre-compression system) and the relief of the compressed product guarantee accurate
shaping of the dices or strips right from the start. Each charge is cut into accurate shapes from the first to the last dice.
Technical background
In practice, there is never a 100% charge of the cutting chamber (this would only be possible with liquid - so its just
theoretical). Using AVS the food is pushe/pressed together in the cutting chamber. The pressure of the infeed ram is
adjustable so the degree of compression can be adjusted for each material. The pressure level of pre-compression
depends on the type of product and its temperature, among other things. Soft/sensitive products are worked on with
little/hardly any pre-compression and harder/solid products are worked on with a comparably higher pre-
compression level.
Delicacy with a “great impact”: for pre-compression, the cut-off knife positions itself right in front of the cutting area.
The material is then pushed together. After pre-compression, the infeed ram moves back a little so that the material
is “relieved”. This means that pieces that are too big do not “shoot” out at the start (due to the pressure being too high).
The first cuts are also cut to the set dice/strip size. Without this “relief”, the first cut would be longer than the set target
length (because of the pressure being too high).
